Hatch hold down

Hi folks
I was just wondering how most hold down their hatches on the boat. I am building a new Conquest and looking for ideas. I am not a fan of the one the lock it on and would rather use a type with "O" rings to hold it and they break when she goes over.
Also what depth of a RB is used?
