Herzog Hurricane setup

I'm relatively new to boating and picked up a new herzog hurricane from a follow RC boater in Canada. I ran the boat as he had it set up and it was fast 45mph+ out of a stock Zenoah (I ran the boat next to my friends bayliner I don't know how accurate that reading is). The boat would wobble at high speeds and was very sensitive. But I might be expecting to much out of the boat in the conditions I was running it.

The boat came to me with the stinger set at around -2 degrees, inside tabs slightly up, outside tabs parallel, rudder at 90.

I then tried the boat with the inside trim tabs with about -2 degrees, outside at -1, stinger at -2, rudder at 90. This made the boat run real wet but it was super stable at speed although it only did about 35 (judging by sight).

I found herzog's suggested setup and tried to follow that. Inside trim tabs parallel. Now the gentleman who put all the hardware on screwed up as herzog recommends mounting the tabs 1/32" from the bottom of the transom, and the tabs on this boat sit a little over an 1/8" (0.137, the inside tabs also sit this high) as he suggests I can put a straight edge down and have 1/32" gap between the flat edge and the transom. As per recommendation the stinger is set at -1. Rudder is at 90 degrees. The boat does have a turn fin on the right side set 90 degrees to the transom.

I tried the boat out today with the last setup as suggested by herzog, and it felt really good on the water, but it wobbled pretty tough. What is causing this? And how do I tune it out?

What is the easiest way to measure or figure out how many degrees your stinger is at?

And I have no clue what cg the boat is at because I do not know how to measure the cg on a mono. Any pointers?

Should I remove all the hardware fill the holes and move it down?

Also can anyone give me some tips on driving a gas boat. I've submarined the boat twice now and its pretty stressful, it happens so fast all I an do is slam the throttle shut and pray no water was inhaled. What do I need to look for in throttle managment?
