Here in Denmark we don't celebrate thanksgiving. But we eat turkeys - for sure.
So here is a true story from my place:
Some 30 years ago my mother in law grabbed a big turkey from her freezer.
Too big a turkey. Would'nt fit into the oven.

At that time I was a boat builder (carpenter), so I offered my professional assistance.
I took my handsaw and sawed off all ekstremeties of this proud, but still frozen bird, untill it became somehow cubic and fittet straight into the oven. Well - it looked a bit silly without legs, wings, neck and rump.
The next day after defrosting the bird and the excessive remains, we found out that a lot of stuffing was craved. We could'nt provide that much, but then I (genious as I am) got an exellent idea: We just put the cut-off extremeties (legs, wings, etc.) inside the bird along with the stuffings.
What an efficient way to cook a much too big turkey!
Anyhow it tasted just fine and filled the stomachs of about 15 hungry persons, as I remember it.
This advice about what to do with a too big turkey is free for anyone to use.
But I warn you: It does NOT look pretty when you serve it.
Happy thanksgiving to you all! Cheers and bon appetite!
